Coconut Rice (Gluten Free/Dairy Free) By: Chef Ilona Daniel

  • Serves: 4

    1 Cup Basmati Rice
    2 Cloves of Garlic, Chopped
    1 Bay Leaf (or if available Kefir Lime Leaf)
    1 Cup Shredded Coconut (unsweetened is preferable)
    1 Cup Coconut Milk
    1 ¼ Cup Water
    1 Tsp Salt

    In saucepan (which has a lid), place all ingredients except rice, and bring to boil. Stir in rice; cover, reduce heat to low and simmer for about 20 minutes or until rice is tender and liquid is absorbed. Remove from heat; let stand, covered, for 5 minutes. Fluff with a fork before serving.image
