Tamarind And Maple Glazed Chicken
15-20 chicken thighs
1/4 cup vegetable oil (more as needed)
1 onion chopped
3cloves garlic finely chopped
3/4 cup maple syrup
2/3 cup dried tamarind in six cups boiling water
1/4 cup dark rum
1 cinnamon stick
3 pieces star anise
2/3 cup Tamari style soy sauce
Place tamarind in a medium size saucepan. Cover with boiling water. Allow to simmer for about twenty minutes till tamarind is completely melted into liquid. Continue simmering till reduced by half.
With the rack in the middle position, preheat the oven to 350 F. In a skillet, brown the chicken thighs in oil on both sides. Do not crowd own. Season with salt. Place the chicken thighs in a large baking dish. Bake for 10 minutes.
Remove some fat from the skillet and brown onion and garlic. Add maple syrup, rum, star anise, cinnamon stick and tamarind syrup. Bring to a boil and reduce by 1/3. Then add soy sauce. Pour around chicken in baking pan and bake for additional 30 minutes.
Serve chicken with sauce on the side. If you wish you can reduce sauce by half to a syrup. Either way is very tasty. Excellent with coconut rice.
